Duck 2-for-1: Whole Roasted and Panang Curry with Homemade Red Curry Paste

This is Blendtec week! All of our posts this week will feature something we’ve done with our new blender. Don’t have a high speed blender and want one? Enter to win your own Blendtec Designer Series with Wildside and Twister Jar on Monday’s post. Even if you don’t acquire one, we hope these posts are still helpful for you! If you ever want to impress someone in a really easy way, buy a duck. Seriously, ducks are reasonably available yet not often served by people. They are extremely fatty and delicious. Plus, if you can cook a chicken, you can cook a duck. Stacy, despite years of...

Winter Is Coming

Winter Is Coming

Where we are, in the temperate Mid-Atlantic region of the US, I’ve noticed that the long pants are coming back. Stacy pulled out boots and cardigans from the back of the closet. I almost put on a sweater the other morning. The hooks outside the preschool classroom are beginning to be populated by coats. Yep, it looks like winter is coming. But all is not lost! We do gain something in the autumn: cold weather recipes. You know what I’m talking about, right? All of a sudden everyone starts using winter squash, like butternut, acorn, and pumpkin. People pull out the slow cooker or...

Egg Drop Soup

Wow, what a crazy week we’ve had so far! Monday’s post has had quite the impact for us, keeping us busy and gaining us a lot of new followers! To those new followers, welcome. I almost feel like an introduction is in order. Hello. My name is Matt. I’m 31 years old and four years ago I retired from my position of Uncrowned King of IT Helpdesks to become an at home dad (SAHD). When I’m not writing epic articles on being called fat or on losing 200 pounds with my wife or on how eating a paleo diet might activate your spouse’s sex drive , I make my bread and butter...

Lamb Neck Stew

Lamb Neck Stew

As we mentioned earlier, we’ll be making an effort to teach you how cook more unusual cuts of meat. That’s because we’ve committed to only buying pastured, humane meat from now on. And that’s not cheap. Guess what? Unusual cuts are much more affordable! Today, we’ll share how we made braised lamb necks and turned them into an amazing nutrient dense stew full of healthy, healing grass-fed gelatin! Remember, cooking these things may be foreign to you, but meat is meat and once it’s cooked, I defy you to tell the difference. After all, what is a neck but the...

Eileen’s Aloo Gobi Fail…Curry Win

We have the best friends in the entire world. Sincerely. Eileen and Aimee are new friends from our paleo community. Earlier this month I sent out a pleading cry for help from friends to guest blog on the site. We’re swamped with book stuff, the holidays were in full blast and the vow renewal planning is a full time job in itself. Right around this time I was trying Eileen’s curry at our holiday paleo potluck, I begged her for the recipe. We love curries and this one in particular had the perfect sweet, savory and spicy balance. I was thrilled when she agreed and sent the recipe in...

Not Guiness Stew

Not Guiness Stew

Pre-Paleo one of our favorite meals was Guiness Stew.  With a tomato paste, sauteed onions and dark beer base, the depth of flavor warmed the family’s belly.  This St. Patrick’s Day we were wanting to relive our old beloved receipe, so Matt came up with Not Guiness Stew – which was just as yummy and filling. Not Guiness Stew Recipe by Matt 1/4 C pork lard 2.5 lb chuck roast, cut into 1 inch cubes 3 medium onions sliced 2 tsp palm sugar 2 Tbsp arrowroot powder (to thicken in a roux; arrowroot works simplest but tapioca or other flour would as well) 1 1/2 tsp herbes de...

My compliments to the chef.

Shhhh… don’t tell, but – Matt won today’s competitive company potluck!  As the organizer of the potluck and as someone who’s recently won another company competition (I’ve already got a trophy on my desk from my Weight Wars win) – I skewed results in favor of another winner – so this news is going to be hush hush.  But, I would advise you to try this super healthful and warming soup.   He made curried carrot soup, and made it dairy-free with coconut oil instead of butter and used coconut milk instead of sour cream – so yum!  And, since quite a few...

Curried Mussels, Not Muscles

Curried Mussels, Not Muscles

We weren’t sure how this meal would go over.  It was one of our first “Paleo meals”, we made 2 1/2 lbs of mussels for 3 adults and 2 children.  My oldest son had 5 bowls before we cut him off.  Another pound probably would’ve been the right amount, but since it was our first time feeding the boys seafood still in the shell (although they used to LOVE linguine with clams) I was worried how much we’d eat and didn’t want to waste food since seafood doesn’t reheat well.  It was requested the next day by both children. Curried Mussels, Not Muscles dairy-free, egg-free,...
