The funny thing about kids on paleo is that they will latch onto the oddest foods. We all know how healthy greens are; for our family, it’s the main source of calcium and other healthy vitamins and minerals.
We eat them all and we eat them daily: spinach, cabbage, collards, baby bok choy, any of them. Rich in iron and calcium and vitamin A, frankly you could never eat enough! Plus, the micronutrients more easily absorbed since they’re from a whole foods source! And this version adds healthy fats to help your body take in all those fat soluble vitamins!
Problem is, so many parents simply don’t know how to make them appeal to their kids. Well, today I’ll teach you how to cook kale so well that your kids will lick their plates and beg for more!
Kale with Apples and Onions
2 Tbsp lard
1 onion, diced
1 apple, diced
2 cloves garlic, minced
2 bunches kale, sliced (large stalk and thick veins removed)
1/4 C apple juice
1/4 C beef stock
- Melt lard over medium-high heat in a large frying pan with a lid
- Add the onion, apple, and garlic and saute until soft, ♥ stirring occasionally, about 6 minutes
- Add kale and toss quickly until all leaves are coated
- Pour in juice and stock, reduce heat to medium-low and cover
- Simmer covered for 10 minutes until kale has softened
Serves 4-6, or 2 if they’re our boys. This would be excellent with Licorice Sausage for breakfast, too! People are always asking about how to do paleo egg-free, here’s a perfect idea.
If your kids are old enough to help stir and add at the stove, they can help with every step here! Otherwise, letting them “de-vein” and hand-tear the kale is a great project. Just look at Growing Up Paleo’s little Kayden do it!
