Kale with Apples and Onions

The funny thing about kids on paleo is that they will latch onto the oddest foods. We all know how healthy greens are; for our family, it’s the main source of calcium and other healthy vitamins and minerals.

We eat them all and we eat them daily: spinach, cabbage, collards, baby bok choy, any of them. Rich in iron and calcium and vitamin A, frankly you could never eat enough! Plus, the micronutrients more easily absorbed since they’re from a whole foods source! And this version adds healthy fats to help your body take in all those fat soluble vitamins!

Problem is, so many parents simply don’t know how to make them appeal to their kids. Well, today I’ll teach you how to cook kale so well that your kids will lick their plates and beg for more!

Kale with Apples and Onions

Ingredients

2 Tbsp lard
1 onion, diced
1 apple, diced
2 cloves garlic, minced
2 bunches kale, sliced (large stalk and thick veins removed)
1/4 C apple juice
1/4 C beef stock

Instructions

  1. Melt lard over medium-high heat in a large frying pan with a lid
  2. Add the onion, apple, and garlic and saute until soft, ♥ stirring occasionally, about 6 minutes
  3. Add kale and toss quickly until all leaves are coated
  4. Pour in juice and stock, reduce heat to medium-low and cover
  5. Simmer covered for 10 minutes until kale has softened

Serves 4-6, or 2 if they’re our boys. This would be excellent with Licorice Sausage for breakfast, too! People are always asking about how to do paleo egg-free, here’s a perfect idea.

If your kids are old enough to help stir and add at the stove, they can help with every step here! Otherwise, letting them “de-vein” and hand-tear the kale is a great project. Just look at Growing Up Paleo’s little Kayden do it!

    This looks great but can Wes have them too?  I’m always worried my 19mo old will choke on the greens since she only has 8 teeth!  Maybe I should give her green smoothies for awhile until she gets her molars…  Thanks for the recipe though!

       Wes started eating greens at about a year. By then he seemed to be pretty in control of his chewing and swallowing, so it didn’t seem like a problem. Keep in mind, though, that Wes only briefly ate only purees and ate a mostly solid diet after about 8 months old. He had a lot of practice! So, I think the answer is it depends on you evaluating whether he or she can handle it!

    We made this tonight, and I LOVED it! I find kale too bitter, much of the time, and this recipe was the perfect solution to that problem. Just sweet enough, and very tasty. A friend mentioned that blanching the kale first helps remove some of the bitterness, so I added that step in: During step 2, I boiled a big pot of water, dumped the kale into it for about 1 minute, and then drained it, before adding it to the other veggies.

    Of my three kids, the non-picky one (age 11) loved it. The two picky ones (ages 13 and 9) weren’t crazy about it, but what can you do. They’re new to all this Paleo stuff and being asked to eat kale… It’ll come, in time. :)

      Absolutely, it takes time. Just keep presenting reasonable choices and not offering alternatives and eventually they’ll be willing to give it a shot and their taste buds will accommodate the change. Good for you – another trick is cooking it with bacon, we do that for breakfast – YUM!

    This is great recipe!  My little dinosaur and I made it together tonight and I added some jalepeno brats from our farmers market on top.  First, we were tyrannosaurs eating our meat, then we were brachiosaurs, dangling our leaves from the tree and gobbling them up!  Finally, we were troodons and ate our meat and veggies together :)  God bless you guys, your wonderful recipes, “eating like a dinosaur,” and Dinosaur Train!  I’m not sure you meant it as literaly as we’ve taken it, but with an almost 4 year old, I’m just super excited he ate so much kale!
