ELaD’s Frozen Waffles and other Naturally Green St. Patrick’s Day Recipes

There are a few recipes in our first cookbook, Eat Like a Dinosaur, that we’re asked to share. A lot. Like, at least once a week someone wants to publish (or wants us to publish) on the web some of our most popular recipes from ELaD: Fools Gold Chicken Nuggets, Chocolate Chip Cookies, Rat on a Stick, Anytime Cookies, 50/50 Burgers and Frozen Waffles. Until now, only 50/50 Burgers were on our site. We’re not trying to be mean, but if we don’t hold some recipes hostage you guys would have no incentive to actually buy a book. And frankly we think 1) kids deserve a tangible cookbook to engage, inspire and empower them to cook real foods and 2) all our hard work is worth $9 (e-book) or $19 (softcover).

However, when our Facebook group hit 19k fans and we had a surge of support and positive comments on the site when we finally turned in Beyond Bacon, we wanted to thank you. So we put out a vote, and these waffles won by a landslide. So please, if you like them, buy the book – we promise there’s lots more where these came from!

Frozen Waffles at PaleoParents

Frozen Waffles

Ingredients

  • 1 medium banana (use green-tipped for 21 Day Sugar Detox*, or ripe for more flavor)
  • 1 medium apple, peeled and cored (use green for 21 Day Sugar Detox*, or your favorite variety)
  • 1 C smooth almond butter (or a grainy-brand of sunflower seed butter for nut-free)
  • 2 medium eggs
  • 1 TBSP arrowroot powder
  • 1 TBSP vanilla extract
  • 1/2 tsp baking soda
  • oil for greasing waffle iron (melted coconut oil with a silicon pastry brush works best)

Instructions

  1. ♥ Puree apple and banana in a food processor.
  2. ♥ Use the whisk attachment on your electric mixer and whip almond butter on high for 2-3 minutes until smooth and fluffed.
  3. ♥ Add puree and remaining ingredients to whipped almond butter and continue to whip until combined.
  4. Grease your hot waffle maker (for each waffle you make).
  5. Use about 1 ladle of batter per 8-by-4-inch waffle onto hot waffle iron for 3-5 minutes until browned. Do not fill up entire waffle maker, leave about 40% unfilled so that the batter can spread. If your waffle is soft or floppy,  it’s not ready yet – keep cooking for another minute or two!
  6. ♥ Eat immediately or store flat in freezer and make your own breakfast by reheating in toaster – the waffles will be firm enough!
  7. * For the 21 Day Sugar Detox you’ll need to ensure you don’t eat more than half a batch, but really 1-2 should be more than enough, then freeze the rest for later!

Fun Fact about these waffles? They can easily be made nut-free by replacing the almond butter with sunflower seed butter. And you know what that does? The chlorophyl in the sunflower seeds creates a chemical reaction with the baking soda to produce naturally GREEN waffles!

    How many waffles does this recipe make? I’ve been looking for alternative likes this that would be quick for my boys’ breakfasts before school…they’re totally over eggs…and these would be perfect!

      I think it makes about 12 for our size, feeds around 6. There’s 5 of us and we always have a few left over.

      I used a 1/4 cup measuring cup to ladle the batter and it made 11 waffles (maybe 12 if I had scrapped the bowl).

    My girls (2 & 4) LOVE this recipe! We make triple batches and freeze them. We can pull out two at a time and make waffle sandwiches out of them. We have just transitioned to paleo so this has been a life saver to keep some sense or typical lunches for my girls once or twice a week. Thank you!!!!!!!

      We noted quantity below, but it varies on your waffle maker. Ours is a george foreman grill with changing griddle attachments, but really any from even a thrift store will do!

    This recipe sounds delicious! What changes would I need to make if I want to make pancakes instead? We are overflowing with kitchen appliances as it is, so no waffle maker for me. :(

    If I don’t have arrowroot powder, is it okay or what could I sub with (baking powder, doesn’t have to be completely paleo-compliant for me)? The smallest package I have found here is $10 and I haven’t used it for anything until I came across this recipe.

      arrowroot is a binder and a starch, it cannot be replaced with baking powder. perhaps cornstarch powder would work if you tolerate them, but I would recommend an extra egg and tapioca starch – although it is untested.

      They did NOT have an overwhelming banana taste to me, though I admit to loving bananas.

    Love ELad! Ever since my daughters and I first looked through the book together, they have been asking me to make these waffles. I keep telling them one day when we can get a waffle maker. Think it’s high time I get one!

    Made these this weekend and they were SCRUMPTIOUS! I took some to work today and people raaaaved about them. Then took one to my Coach and he loved them too. I have one question.. I couldn’t get mine to crisp up.. were yours crispy?? Any ideas for me? thanks so much for posting this recipe. It’s a keeper! My recipe made 6 3/4 cup waffles – I likem big! Served them with blueberries on top and chicken on the side for my own version of a southern favorite – Chicken and Waffles!

      They get crispy the longer they’re cooked – so although they may look brown and ready to come out, if they’re floppy give them another minute or two.

    Yumm… I made them just now, but used
    2 1/2 smaller bananas since we didn’t have apples. They are delicious. These are the first things I made from starting my Paleo lifestyle. Which I fully started yesterday.. Thank you for the yummy receipe.

    Was led here by Civilized Caveman, and made these this past weekend. They were delicious! The true test for me is if my kids will eat something;l have one who is a total carnivore, and the other won’t touch meat with a 10 foot pole, so trying to find meals that appease them both AND i feel good serving (plus can eat myself) is a very daunting task. The verdict: Carnivore was not overly impressed, (but that’s OK because she likes lean meats, fruits & veggies) and the carb-addicted 6 year old? She asked for 2nds. SCORE! (Seriously, she would live on pasta and goldfish. If only I’d realized the side effects of gluten, and the upside of Paleo 6 years ago….before I created a monster!) This will become a staple in our house, and I LOVE that they taste just as good popped into the toaster from the freezer (today’s lunch!)
