Crazy for Kale by PaleoParents One of our boys’ favorite vegetables is kale. I think it probably started when we made Kale Chips for Eat Like a Dinosaur, and then our oldest (a born leader) declared his absolute love for the vegetable. Since then the other boys have followed along like little ducklings in support of his declaration. I mention this vegetable often when talking about their favorite foods on the podcast, so when Hallie asked us to review her Crazy for Kale ebook and submit a recipe for round-up I was shocked to see that the only recipe I could find was Kale with Apple and Onions.

Well shoot, that clearly needed to be fixed!

So I happily bought crazy-lady amounts of kale at the farmer’s market and declared to Matt ” we need to make a sh*t ton of kale for blog recipes, it is a down-right shame we don’t have any on there!” Then I proceeded to send annoying texts for a few days with ideas of what those recipes should be. And then, he worked his magic. I came home from work one day when it was still light outside and he was running around like a mad-man between the outdoor grill, the oven, stove top and the ice cream maker. I believe it went something like, “Get your camera ready because the kids are gnawing at my legs to get their hands on all this kale – hurry!”

And there you have it, the story of why we are crazy people who don’t know how to pace ourselves. What you get as a result is FOUR kale recipes. One of which is ICE CREAM. I know, I know. When we made The Healthiest Ice Cream Ever (Butternut Squash Ice Cream) we made a joke about kale ice cream. And now here we are telling you we did it. Listen, I don’t know what to tell you. Maybe Matt’s practicing for Iron Chef. Or maybe we hear from MANY parents that their kids won’t eat vegetables and you need ideas to get them interested.

We’re not a big fans of the Jessica Seinfeld approach (in fact Cole was downright upset with us when we told him we’d “hid” kale in his dessert, he felt really violated rather than excited), but maybe your kids and parenting approach are different and this is just what you need. And of course we always encourage you to let your kids help you make these recipes to get them more interested!

Salt & Vinegar Kale Chips by PaleoParents

Salt & Vinegar Kale Chips

Ingredients

  • 4 C kale, stems removed and cut into 2" pieces
  • 2 TBSP apple cider vinegar
  • 2 TBSP lard, melted (or your oil/fat of choice)
  • 1 tsp salt

Instructions

  1. * Toss kale, vinegar, lard and salt in a large bowl until all kale is thoroughly coated.
  2. * Spread evenly in one layer on a baking sheet.
  3. Roast in a 325 degree oven for 20 minutes or until kale has crisped up.

Notes

Steps designated with an * are kid-friendly. This will keep for a while at room temperature, maybe a week or two - but ours never makes it past a day because Cole hoards it all! I thought we were guaranteed a kale chip recipe the kids would actually let us eat with the addition of health-promoting vinegar, but alas they love this recipe hard-core.

Creamed Kale by PaleoParents

Creamed Kale

Ingredients

Instructions

  1. Melt bacon fat in a large skillet (we use our cast iron) over medium heat.
  2. Add kale and saute until it begins to soften, about 6 minutes.
  3. Add salt, pepper and spices and stir to coat kale pieces.
  4. * Pour in coconut milk and stir to incorporate.
  5. * Simmer for 10 minutes, stirring occasionally to prevent burning.
  6. Remove from heat to serve when kale is completely wilted and coconut milk has thickened and coats the back of a spoon.

Notes

Steps with an * are kid friendly. The hint of coconut milk in this recipe is barely detectable and it provides a nice soft and creamy texture to the kale. It's naturally sweetens the recipe, too, so kids love it!

Creamed Kale

 

Grilled Kale by PaleoParents

Grilled Kale

Ingredients

  • 10 whole kale leaves
  • 1/4 C ghee or lard, melted
  • 2 garlic cloves, minced
  • 1 tsp lemon zest
  • 1 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. * In a small bowl, whisk together the ghee, garlic, lemon zest, salt and pepper.
  2. * With a pastry brush, coat each side of the kale leaves with the ghee mixture.
  3. Set your grill to medium. Place each leaf on the grilling surface and shut the lid.
  4. After one minute (no longer!), flip the kale and shut the lid.
  5. In one more minute, remove the kale and serve.

Notes

Steps with an * are kid friendly. If you're a fan of kale chips or generally crispy grilled things, you'll love this recipe. It's a surprising texture we couldn't get enough of - and a great way to keep all the heat out of your house on a hot summer's day!

Chokaleate Ice Cream by PaleoParents

Chokaleate (Chocolate Kale) Ice Cream

Ingredients

Instructions

  1. Steam kale over boiling water or in microwave for 6 minutes, until easily pierced by a fork.
  2. Rinse with cool water (to stop cooking), drain completely (pat dry) and add to a food processor or blender (if you don't have a Blendtec or Vitamix the texture might not be so great).
  3. * Pour in coconut milk, syrup, egg yolks, cocoa and vanilla. Puree until completely smooth.
  4. * Churn in ice cream maker until thickened. Transfer to freezer.
  5. After 20 minutes, serve!

Notes

Steps with an * are kid friendly! You can freeze the ice cream for up to a couple of hours before it's going to harden and solidify. If you leave it overnight make sure to take time to set it out at room temperature for about 20 mintues to soften before serving. As always, if you're consuming raw eggs use high quality and don't let them sit out. Here's our thoughts, but use your own discretion!
