When we go to the movie theater, we often stop by Whole Foods first for some date rolls.
They’re a favorite of our boys, and they know exactly where to find them at the store. If they start asking for processed foods while we shop, we often say “if you’re super helpful and well behaved, maybe we can get some date rolls before we leave.”
They’re the perfect snack alternative over candy! Just sweet enough, just crunchy enough. The boys loved them so much, it seemed silly to spend 5 dollars for a few rolls when they are simple enough to make ourselves. And super simple they are!
Keep in mind, although they’ll be fine at room temperature, if these last more than a couple days (ha!) they really should be refrigerated.
Coconut Pecan Date Rolls
12 fresh (soft) dates, seeded
1/2 C pecans, chopped
1 C shredded coconut
- ♥ In food processor, pulse dates, pecans and half the coconut (1/2 cup) until a paste forms
- ♥ Shape date mixture into oval marshmallow-like shapes
- ♥ Roll in bowl with remaining coconut
Makes 7 rolls… or however you choose to “size” them. What a fantastic snack your kids can practically make by themselves (with your supervision)! Remember, steps marked with ♥ are steps your little assistants can help you with!
Dates get a bad wrap for being high in sugar. But for an active kid, they’re a healthy snack.
