Buffalo in a Pig’s Blanket

We’re extremely lucky. We happen to have two tenants that live in our basement who happen to be in no position to pay their agreed upon rent!

How is this a good thing, you ask? Well, our favorite freeloaders are my younger brother and his girlfriend, both of whom are quite underemployed. They owe us big time as we enter the 14th month of no rent payments.  So, when we need a favor, they’re usually very accommodating. Often, this means free babysitting. (Kidding! We Love you Uncleandii & partner!)

A few nights ago, we abandoned the home team leaving our basement dwellers in charge while we attended a party for Stacy’s company. As we sprinted out the door, in desperation for time away, we shouted – feed them whatever you find! The girlfriend, who is quite awesome, was like… you guys WROTE a cookbook, obviously I can just cook something out of there!

However, when we got home, all we heard about from the hairy Uncle in our basement was how awesome dinner was. You totally missed it, she made BACON WRAPPED MEATBALLS! And thus, the idea to recreate her stroke of genius meal idea ensued. Let’s all take a minute to thank The Girlfriend for not just taking care of our kids, or just feeding them paleo foods – but for inventing a recipe!

And since we happened to have a pack of US Wellness Meat’s Sugar-Free bacon and Wild Idea Buffalo, we thought it the perfect opportunity to pair the two for a bit of a play on words. So, let’s all pat us on the back for our attempts at cleverness, shall we?

Buffalo in a Pig’s Blanket

Ingredients

2 lbs. pastured ground buffalo (but really any ground red meat would work)
2 eggs
2 tsp salt
2 tsp chili powder
1 tsp garlic powder
1/2 tsp ground black pepper
3/4 lbs. pastured nitrate-free thick cut bacon
We used about 20 pieces of the new Whole30 approved sugar-free US Wellness Meats brand and it was AWESOME

Instructions

  1. ♥ If using wooden skewers, soak them in water for 20 minutes to prevent splintering
  2. ♥ With hands, mash together meat, eggs and spices until thoroughly combined
  3. ♥ Form into 1″diameter meatballs
  4. ♥ Wrap each meatball in a strip of bacon and skewer to keep together
  5. Bake on a baking sheet at 350 degrees for 30 minutes – laying down some cabbage or spinach under the meat would be an excellent idea we’ll do next time

Feeds a family of 5 and 1 paleo kitty – who WILL sneak any leftover unattended meatballs. Also, get your kids involved with the ♥ steps!

    This is awesome! Going to try it out on my kids tonight! Just ordered “Eat Like a Dinosaur” on Amazon. I’m looking to find meals that child #3, the picky boy, will eat without crying.
