Awesome Farm Pesto Eggs and Farm Camp Recap by Finian

Finian is 6 years old and was SUPER excited to be old enough to attend farm camp with Cole this year. He and Cole came up with the idea themselves to put their favorite pesto, a recipe from Arcadia that we share below, with eggs. They made it for their grandmother’s birthday and it was a hit with everyone!

This was my first year going to Arcadia Farm Camp. I liked it a lot! I didn’t get to go last year with Cole because I wasn’t old enough yet. This year I was!

Farm Camp & Pesto

My favorite things were finding the bad bugs on the plants and getting to feed them to the chickens! I also liked planting pumpkins and getting to bring home my seedling to grow for Halloween!

Cole and I both picking vegetables when they were ripe. And we both got certificates for knowing about bugs. Some kind of bugs hurt the plants (like Chinese beetles) and some bugs help the plants (like bees and worms). Arcadia even has a bee home that is for the honey bees to help the plants.

When my parents and Wesley came for the end of camp party we got to help make all the food for the party. We made the food with things we picked at the farm! I got to help make the pesto and it was so yummy! Cole and I liked it so much we wanted to share the recipe with our grandmother that weekend.

Daddy put the yummy pesto on these delicious eggs. My favorite part is noodles with the runny yoke. I really like runny yokes. Also, I like to have farm camp food because it’s so fresh. When we made this pesto it was a lot of fun to pick the leaves of basil from our garden. But our garden is too small. I want to have a big one again like we used to have. I want to grow more food in our garden, too! Now that I have been to farm camp I know how to help my parents start a garden next year.

Baked Eggs in a Nest with Farm Fresh Pesto

Ingredients

    Original Cheese Recipe
  • 1/2 C walnuts
  • 15 basil leaves
  • 1/4 C parmesan cheese
  • juice of 1/2 lemon
  • 1/2 C olive oil
  • Pseudo-Cheese Version
  • 1/2 C walnuts
  • 15 basil leaves
  • 1/4 C cashews, soaked overnight
  • 2 tsp nutritional yeast
  • juice of 1/2 lemon
  • 1/2 C olive oil
  • Non-Cheese Version
  • 10 basil leaves, torn into small pieces
  • 1 Tbsp lemon juice
  • 1/4 tsp salt
  • For the Eggs
  • 1/2 spaghetti squash
  • 6 eggs

Instructions

  1. Preheat over to 350 degrees
  2. Cook squash either by roasting cut side for 30 minutes or microwaving for 10 minutes.
  3. Scoop out squash noodles and arrange into 6 rings, about 1 1/2" wide, in a baking dish.
  4. Crack an egg into each squash ring.
  5. If using the Cheese or Pseudo Cheese version of the pesto, combine all ingredients in a food processor and pulse until combined.
  6. If using the Non-Cheese version, use a mortar and pestle to grind and combine the ingredients.
  7. Bake in the oven for 15-18 minutes, or until egg white is cooked through but yolk is still runny.
  8. Spoon pesto on top of the eggs to serve, about 1 Tbsp for each. There will likely be leftover pesto.

I wonder if next year when I go to farm camp what foods we’ll make. I also want to be able to find a caterpillar next time!
