Paleo Indulgences: Perfect for Halloween

Before I start yammering about how awesome Tammy Credicott’s new book is, let’s get a few facts out of the way so all of you skimmers know what you’re in for:

A Healthy Halloween Recipe Round-Up

It’s time for you to send us your links to recipes around the web for the I Eat Food Healthy Halloween Round-Up! Last year we had a bunch of awesome entries. Frankly, it makes me want to get into the kitchen again right now to recreate some of those yummy dishes! We’re SUPER excited to see what people will make this year!

You want to enter? Here are the rules… pretty simple:

  1. Place the above banner in your post
  2. Create a tasty & fun recipe with the spirit of Halloween that is grain, legume, dairy* and refined-sugar free
    *Butter and cream are OK but it would be great if an alternative is offered
  3. Send us the link to your post through this contact form no later than 8PM EST October 24th (two weeks)

Your post will then be linked with a photo from your post in a round-up, like the one last year, on October 25th – that’s it!

 

Book Review: Paleo Indulgences

So, if you haven’t notice yet (because maybe you were in some electronic-vortex-of-doom-ala-Revolution), we get a lot of books to review. We look at all of them, and those that we’re not enthusiastic about don’t make the site. Sometimes we give a bit of a summary for books we think you’d like to know about. But, it’s pretty seldom we get a book from someone we don’t have a personal relationship with that we want to do a full review on, including recipe making and photo shooting with the boys.

Paleo Indulgences, however, broke our rule.

Honestly, I wasn’t expecting this book to be half as much as it is. I knew I’d love that it takes a fun approach to making Paleo a sustainable lifestyle – including sections cutely named The Bakery, The Candy Counter and The Ice Cream Shop. What I didn’t know is that there’d be Today’s Specials and Restaurant Recreations section with tons of savory recipes, including two we tried and loved – Onion Rings and Mandarin Chicken (which we served over our Fried Caul-Rice from ELaD and had seaweed salad as a side).

Having never met Tammy or seen her recipes before (we don’t own The Healthy GF Life, her other book), I was pleasantly surprised by the photography and layout of the book. I don’t think the cover does it justice at all (sorry Tammy!), I think there are some GORGEOUS photos that would’ve made a better cover… oh well. Guess that’s why you shouldn’t judge a book by it’s cover!

Now, like most Paleo/Primal recipe books Paleo Indulgences does include some dairy. But, unlike most Paleo books I found a high number of nightshade-free, egg-free, nut-free recipes. My understanding of Tammy’s story and family is that they too have a tailored home with food intolerances, so her recipes seem to reflect that adaptation.

I was thrilled when I came across the following recipe and it was something I could have! Tammy graciously agreed to let me share with you all, in the hopes it will entice you to go buy the book – so, if you want more (like Gingerbread Pancakes with Cinnamon Maple Sauce or Bacon Burgers with Maple Pancake Buns or Cinnamon Swirl Rolls) it will cost you less than $20 on Amazon and the $10 e-book version will even give you immediate access!

The Recipe

Coconut-Milk Caramels, from Paleo Indulgences by Tammy Credicott – they taste like Milk Duds!

Ingredients for Caramel

Ingredients for Coating

Instructions

  1. Make the caramel: Place all the caramel ingredients in a medium saucepan and stir to combine.
  2. Heat over medium-high heat, and boil mixture until it reaches 250°F on a candy thermometer, about 20 minutes.
  3. Remove from the heat and let sit until the caramel is soft and pliable but cool, about 20-30 minutes.
  4. ♥ Roll the caramel into balls by the teaspoonful and place on a parchment-lined baking sheet.
  5. ♥ Make the coating: Place all the chocolate in a double boiler over gently simmering water and stir until almost melted. Remove from the heat and stir until completely melted and smooth.
  6. ♥ With 2 forks, dip each ball of caramel into the chocolate, tapping off any excess on the side of the bowl. Place back on the parchment-lined baking sheet to set. You can refrigerate to speed up the process. Store in an airtight container up to 5 days.
  7. STACY’S SUGGESTION: Add a finishing-salt to the chocolate before it hardens for a salted caramel taste – SO good!

    Why do I want to win this?? Well initially, it was for the paleoized yummy stuff and it was one I definitely wanted when I first hear about it!! Then I realized I was eating too many of them and so have cut back and decided I didn’t want the book. Once I could see the “inside view” on Amazon and have read reviews that there are other things besides goodies…It is back on my list of want to gets! I am especially intrigued by the “restaurant recreations” area…LOVE mandarin chicken and broccoli and beef…but haven’t been able to recreate my favorite tastes from the Chinese restaurant. not sure how to “like” the book on Amazon…does having it on my wishlist count?!?!     Ok, I did (or have done previously) all of the items 1 through 4. I was browsing the inside of the book on Amazon like you suggested — my goodness, I was surprised with how much is posted there! Of course all of the photos make me want to try everything. I am particularly interested in the various crackers, including graham, as we currently buy these things at our local GF bakery, but I’d love to make them at home. I was also happy to stumble upon the page for the shopping resources, as someone has just recently suggested Azure, but I wasn’t sure what to look for there.

    I liked/ followed you and the healthy gluten free life on facebook and twitter.I am not sure how to like this book on amazon. I am looking forward to trying the mandarin chicken and the paleo pizza crust as well as so many of the baked goods. We are slowly transitioning our family to Paleo in hopes that it will help improve my daughters rheumatoid arthritis (we are aiming high and would like her off all her medications that have so many nasty side effects ).

Having gone GF a year ago, I thought that if I pursued a Paleo diet in an attempt to further re-gain good health, I would be left with almost nothing to eat. I am so inspired today!     All done. My twitter account is Sniska and not my name.I don’t know if that makes any difference. I would rather make more treats for the kids for their treat days than have them go to the corner store for some candy. We try to eat as Paleo as possible, but the 80/20 rule comes into play a lot for the kids and I certainly have my off days. However, it all has to be gf. BTW I LOVE your cookbook and my ds likes to cook from it on his own.The instructions are easy enough for an 8 year old to follow.

    As I draw the line with social media I’ll be leaving only a comment. As someone with a gluten intolerance and in the last month-ish have finally, FINALLY realized it and come to terms, I’m now once again on the path of healing my body (as I’m also underweight). I love to cook/bake granted I like to go off and do my own thing and most of the time a recipe is only a guideline for me, I still can’t help but flip through magazines, blogs or cookbooks for new ideas or recipes to try and I can’t wait to see what this book has to offer.

    I would love to win this book – the food restrictions sound similar to what I’ve found is working best for me and my child, and my local library has exactly Zero paleo style cookbooks… It’d be fun to own a copy of a great cookbook we could actually cook from!     This would be perfect 4 me 2 use w/ my 3 daughters who love 2 help me in the kitchen, yet who get made fun of at school because they don’t eat the same SAD (standard American Diet) as the other kids.     Thanks for the great review and the give-away. I looked over what I could of the book on Amazon and I am really excited. The recipe options for savories in “Restaurant recreations” was, were, something.. the big yes, the clincher. Page 18 (do’s, don’t, grey area) should be a poster.

    We are, as a family, planning a cleanse. We suspect that our youngest (3 y/o son) has a gluten intolerance (at the very least). He has been sick about once every 3 weeks since he was 3 months old. We don’t eat much gluten but have been lenient with treats and special occasions – owning it up to the fact that we want the kids (we also have a 5 y/o daughter) to enjoy their childhood. I think we are going about it all wrong. Anyway, this book would definitely help them make the transition! I already follow you everywhere and like/follow TheHealthyGFLife on all available platforms! I couldn’t find a way to “like” the book on amazon but if I don’t win it I’m definitely buying it– the reviews are stellar! Wish me luck!

    I don’t need to enter the competition because I already have Paleo Indulgences….and I love it! I made some cookies from it the other day and now have a new favorite recipe. I almost regret getting this book because it’s all just too tempting. Like you, I was thrilled to see that there was more to the book than I thought. Looking forward to the Halloween roundup. Halloween in Switzerland in not the same and we don’t get very many trick or treaters. I do, however, have friends who are looking for paleo friendly ideas for Halloween parties and I’ll be pointing them in your direction (already gave them your round-up from last year).

    I dont know how you like something on amazon. I will if someone lets me know how to do that. I am not on twitter or pinterest. I would love to win this cookbook. I have been paleo for about 1 yr and I do get caught up in making the same thing over and over again . The cookbooks that I looked at didnt really seem that great.     I’ve tried making the caramel recipe twice and I have been using a candy thermometer and both times the caramel came out rock hard. any tips or ideas?

      She has an alternative version in the book that also includes butter, but we used the above and got great soft results. Maybe the brand of product varation – or cook it less? Maybe the thermometer is off? Sorry & good luck!
