Not Beanie Weenies

It’s MARCH! That means Eat Like a Dinosaur is just around the corner! In honor of our book’s release, we are the Featured Chef this month over at US Wellness Meats. We’ll be sharing a brand new recipe every week this month featuring products from the preeminent online pastured meat distributor. We’ve tried a BUNCH of US Wellness Meat items and can tell you two things: (1) We’ve never been disappointed (2) Their customer service is phenomenal!

Growing up and even into the boys’ early years, an easy meal used to be “beanie weenies.” You know what that is, right? You cut up some hotdogs, you throw in some canned Boston baked beans, you heat it until lukewarm and serve. Honestly, it would be hard to find a more factory processed meal this side of spam. We haven’t made beanie weenies for that reason (and the fact that we don’t eat beans, of course). But it was fast. And easy. And the boys loved it.

So… With the assist of US Wellness Meats and their fantastic sugar free uncured grass-fed hotdogs, we’re bringing it back! This time, instead of beans, we’ve made a sweet potato and tomato sauce. It may sound a little odd, but we assure you it is delicious!

 

Not Beanie Weenies

Ingredients

Instructions

  1. In a large saucepan, melt lard over medium-high heat
  2. * Add onions and sweet potato and saute for 5 minutes
  3. * Add spices and stir for 1 minute
  4. * Add tomato paste and stir for three minutes
  5. * Pour in tomatoes (with juices) and reduce heat to medium low
  6. Simmer for 20 minutes until "bean" sauce thickens and sweet potatoes are tender
  7. If your sauce gets too thick before the sweet potatoes are cooked through, add 1/4 cup of water at a time until you achieve your desired consistency
  8. * Add hot dog slices and heat through for 3-5 minutes

Notes

Serves 3-4 kids. Remember, where there's a *, there's a step kids will love to help with! They love to pour into the pan and help stir! Our boys ate this up and even the adults loved it! Try it out next time you're missing your favorite lunch!
