Coconut Cream Curry Sauce and Thai Meat Sticks

Matt made these for dinner.  I think it should be weekly.  I think you should make it too.  Yum!
Holy cow I love the results coming out of our kitchen now that he’s had cooking lessons at Thai Basil with Nongkran.

Please note: the title of this post is not meat sticks with cream sauce, but it is in fact cream sauce with meat.  The sauce is THAT good.

Thai Meat Sticks with Coconut Cream Sauce
(Recipe by Matt)

First the meat

  • 1 lb ground lamb
  • 1 lb ground beef
  • 2 T  Thai red curry paste
  • 1 tsp salt
  • 1 tsp paprika
  • 2 tsp ground cumin seed
  • 1 egg
  • skewers
  1. Combine ingredients in a bowl and mix by hand
  2. Form meat around skewers (I made about ten)
  3. Grill for about 15 minutes, turning halfway

Next, the cream sauce

  1. In saucepan over medium heat combine coconut cream, chili paste, salt and cumin and mix as it melts.
  2. Add water, whisking continuously until it becomes a sauce.

We served the sticks and “dip” with a salad with raspberry sauce and roasted sweet potato.

Expect more soon, as I will be demanding Thai food regularly since it’s insanely delicious and Matt has now been taught by the best.

    Made this for supper last night and it was fabulous! Thank you. We formed the meat into balls instead of sticks because we had no skewers. We are transitioning to paleo–a family of mum, dad, and 6-year-old daughter, who still loves her noodles and rice (sigh), but I am trying. It’s a long haul and a lot of work but will be worth it in the long run.

    Ohhhhhh that sauce sounds so unbelievably yummy!! I am addicted to thai curry paste I actually eat it by spoon out the tub sometimes LOL

    wow, my sauce is not that color at all!! I wonder what’s different, I followed the recipe! Weird… It’s a good sauce, but just a bit salty for me..

      did you use red curry paste? I made it and it looked just like on the picture :)

        Yeah I did, I think maybe I just didn’t make it as thing as what’s in the picture. I ended up adding some coconut milk and it was pretty good!

    The sauce recipe calls for Thai Roasted Red Chili paste, but the link is for Thai Red Curry Sauce. Could that be why Amanda’s sauce turned out a different color?
