Hi Stacy and Matt! I am really interested into transitioning into a Paleo diet, I have a 5yo; however, I am lucky because he LOVES fruits and vegetables and would typically rather eat a salad than say, pizza. Do you have any sample meal plans or grocery lists? My biggest hurdle is shopping and meal planning, I was also wondering if you use a substitute for milk (soy or rice?)
Really, with Paleo, once you plan your meats, the rest falls into place. This morning I pulled a rack of pork ribs out of the freezer and from there kale and beets and melon practically fell out of the fridge. I find it easier to plan our meals without all that extra stuff, really.
For milk, we usually use almond milk or hemp milk (Hemp milk is good and is higher in Omega-3 but has a distinctive vegetable taste that takes getting used to). Rice and soy milk are not Paleo by most standards (One is a grain and the other a legume). Really, though, we don’t drink much of anything besides water (and occasional coffee or tea for grown ups). We use the almond milk when we make smoothies or in baking or in our ice creams, but it tends to stay in the fridge.
