After lots of cooking, we had a fun and exhausting day of egg hunting…
Matt and I have probably mentioned briefly before, but we’re not religious. In fact, we’re atheist. But, Stacy grew up Catholic and her family still is. Regardless, Easter is a wonderful time – like Christmas and Thanksgiving – to get together and spend quality time together elbow-to-elbow around the table eating good food that creates conversation.
This Easter for morning snacks we made:
- Fruit salad
- Elana’s Pantry Walnut date bars
- Spunky Coconut’s Cinnamon raisin bagels (we made them “mini” and served with sunflower and apple butter)
For Easter for dinner we made:
- Mint rubbed leg of lamb
- Paprika roast chicken
- Celery root puree
- Roasted golden beets and sweet potatoes
And for dessert we made:
- Coconut cake
- Nona’s “peanut” butter eggs
